A quick and kid-friendly dinner using flour tortillas, mozzarella cheese, and scrambled eggs. Takes about 15 minutes start to finish and is perfect for busy weeknights. Great for picky eaters!
Set out your flour tortillas, mozzarella cheese, eggs, butter, and salt. Get a mixing bowl, whisk, non-stick skillet, and spatula ready on your counter.
Crack all 6 eggs into your mixing bowl. Add a pinch of salt. Whisk them together until the yolks and whites are fully combined and slightly frothy.
Heat your skillet over medium heat and add 1 tablespoon of butter. Once melted and bubbly, pour in the whisked eggs. Gently stir with your spatula, pushing the eggs from the edges to the center. Cook until just set but still a bit soft, about 3-4 minutes. Transfer to a plate and set aside.
Use a paper towel to quickly wipe out any egg bits from the skillet. This helps your quesadillas cook evenly without burning.
Place one flour tortilla flat on your work surface. Sprinkle about 1/4 cup of shredded mozzarella on one half. Add a scoop of scrambled eggs on top of the cheese. Sprinkle another 1/4 cup of cheese over the eggs, then fold the tortilla in half.
Heat the skillet over medium heat with a little butter (about 1/2 teaspoon). Place the folded quesadilla in the skillet. Cook for 2-3 minutes until golden brown on the bottom, then carefully flip with your spatula. Cook another 2-3 minutes until the second side is golden and the cheese is melted.
Repeat steps 5 and 6 for the remaining tortillas, eggs, and cheese. You should be able to make 4 quesadillas total. Keep finished ones warm on a plate covered with foil.
Use a sharp knife or pizza cutter to slice each quesadilla into 3 wedges. Serve warm on plates. These are great with a side of salsa, sour cream, or fresh fruit!
