Prepare your ramekins and preheat oven

Preheat your oven to 425°F (220°C). Generously butter the inside of two 6-ounce ramekins, making sure to coat the bottom and sides completely. Dust each ramekin with cocoa powder, tapping out any excess. This prevents sticking and makes unmolding easier.

Melt chocolate and butter together

Break the chocolate into small pieces and place in a microwave-safe bowl with the cubed butter. Microwave in 20-second intervals, stirring between each, until completely smooth and melted. Alternatively, melt over a double boiler. Let cool for 2-3 minutes.

Mix eggs and sugar

In a separate mixing bowl, whisk together the whole eggs, egg yolks, and granulated sugar until the mixture becomes pale and slightly thick, about 1-2 minutes. The sugar should be mostly dissolved.

Combine chocolate mixture with eggs

Pour the melted chocolate and butter mixture into the egg mixture. Gently whisk until everything is well combined and smooth. The batter should be glossy and uniform in color.

Add flour, salt, and vanilla

Sift the all-purpose flour into the chocolate mixture, then add the salt and vanilla extract. Fold gently with a spatula until just combined. Don't overmix—a few small lumps are fine. The batter should be thick and silky.

Fill the ramekins

Divide the batter evenly between your two prepared ramekins, filling each about 3/4 full. Gently tap each ramekin on the counter once or twice to release any air bubbles.

Bake the lava cakes

Place the ramekins on a baking sheet for easy handling. Bake in the preheated oven for exactly 12-14 minutes. The edges should be firm and set, but the center should still jiggle slightly when you gently shake the ramekin. Don't overbake or you'll lose the molten center.

Cool briefly before unmolding

Remove from oven and let the cakes cool in the ramekins for exactly 1 minute. This brief rest helps them set just enough to unmold without falling apart.

Unmold and serve immediately

Run a thin knife around the edge of each cake to loosen it. Place a serving plate upside down over each ramekin, then quickly flip both together. Gently lift off the ramekin. If desired, dust with powdered sugar, add a scoop of vanilla ice cream, or fresh berries. Serve immediately while the center is still molten.
