Decadent Chocolate Lava Cakes for Two

Prepare your ramekins and preheat oven

Preheat your oven to 425°F (220°C). Generously butter two 6-ounce ramekins, making sure to coat the bottom and all sides. Dust each ramekin with cocoa powder, tapping out any excess. This prevents sticking and makes unmolding easier.

Melt chocolate and butter together

Break the chocolate into small pieces and place in a microwave-safe bowl with the cubed butter. Microwave in 20-second intervals, stirring between each, until completely smooth and melted. Alternatively, melt over a double boiler. Let cool slightly for 2-3 minutes.

Whisk eggs and sugar

In a separate mixing bowl, crack the whole egg and egg yolk. Add the granulated sugar and vanilla extract. Whisk vigorously for about 1-2 minutes until the mixture becomes pale, slightly thick, and well combined.

Combine chocolate mixture with eggs

Pour the slightly cooled melted chocolate and butter into the egg mixture. Whisk gently but thoroughly until everything is fully incorporated and smooth with no streaks.

Add flour and salt

Sift the all-purpose flour over the chocolate mixture, then add the pinch of salt. Fold gently with a spatula or whisk just until no flour streaks remain. Don't overmix — stop as soon as it's combined.

Fill the ramekins

Divide the batter evenly between your two prepared ramekins. They should be about 3/4 full. Tap each ramekin gently on the counter to release any air bubbles.

Bake until edges are set

Place ramekins on a baking sheet for easier handling. Bake in the preheated oven for exactly 12-14 minutes. The edges should be firm and set, but the center should still jiggle slightly when gently shaken. Don't overbake or you'll lose the molten center.

Rest briefly and unmold

Remove from oven and let the cakes rest for 1 minute — no longer. Run a thin knife around the edge of each ramekin. Place a serving plate upside down on top of each ramekin, then quickly and confidently flip them over. Gently lift the ramekin off.

Serve immediately

Dust with powdered sugar if desired, add a scoop of vanilla ice cream or dollop of whipped cream, and serve right away while the center is still warm and molten. Cut into the cake to reveal the flowing chocolate center.
