Make fluffy, bakery-style cinnamon rolls from scratch with a rich cream cheese frosting. This recipe takes about 3 hours including rise time, but the active work is beginner-friendly. Perfect for weekend breakfast or brunch gatherings.
Pour the milk into a microwave-safe bowl or small saucepan. Heat until it reaches about 110°F (warm to the touch but not hot). This temperature activates the yeast without killing it.
In a large mixing bowl, combine the warm milk, yeast, and 2 tablespoons of granulated sugar. Stir gently and let sit for 5-10 minutes until the mixture becomes foamy. This means your yeast is alive and ready.
To the foamy yeast mixture, add the melted butter, eggs, and remaining sugar. Whisk together until everything is well combined and smooth.
Add the flour and salt to the wet ingredients. Stir with a wooden spoon or spatula until a shaggy dough forms. It will look rough and sticky at this stage—that's normal.
Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until the dough becomes smooth, elastic, and only slightly sticky. You can also use a stand mixer with a dough hook for 5-6 minutes on medium speed.
